Zucchini Crust Pizza

Can you guess it from the name? I think it’s very much clear to you all that this pizza’s crust is prepared by zucchini. So, here you don’t need any dough or crust. It is tricky but it’s true.

Ingredients
FOR MAKING THE CRUST
  • 5 tablespoon Almond meal
  • ½ cup Mozzarella blend finely grated
  • 4 cups Fresh zucchinis grated and chopped
  • 3 tablespoon Parmesan finely grated
  • ½ teaspoon Garlic powder
  • 1 teaspoon Oregano
  • 1 teaspoon Basil chopped
  • 1 Egg beaten
  • Pinch of Salt
FOR MAKING THE SAUCE
  • 14.5 oz (415 gram) Petite diced tomatoes drained
  • 2 large Garlic cloves minced
  • Salt to taste
  • Pepper to taste
  • ½ teaspoon Italian seasoning
  • 1 tablespoon Olive oil
Instructions
  1. Take the zucchinis in a microwave-safe bowl and microwave it for about 5 minutes on high.

  2. Now put a piece of cheesecloth in a colander and let the zucchinis drains while it cools.

MEANWHILE LETS PREPARE THE SAUCE
  1. Heat a pan and add ½ the olive oil in it.

  2. Now add garlic in it and sauté it until it is fragrant.

  3. Then add the drained tomatoes and Italian Seasoning and mix it well.

  4. Let the sauce cook over low heat.

  5. Now when the zucchinis are cool enough, use your hand to squeeze as much water as you can out of the zucchini.

  6. Then in a bowl, mix the zucchini, Almond Meal, grated mozzarella blend, parmesan, oregano, garlic powder, salt, and egg.

  7. Combine them very well to make the crust mixture.

  8. Now spray a baking sheet with olive oil and divide the crust into two balls.

  9. Then by using your finger, spread the mixture out into two crusts.

  10. NOTE

    Take care that the edges are not too thin.

  11. Bake the crust in an oven at 450° F or 230° C.

  12. Once done, top each pizza with the prepared sauce and in that sauce, add the remaining olive oil, salt & pepper, basil leaves and chunks of fresh mozzarella.

  13. Now again bake the pizza for a few minutes more until the cheese has melted nicely.

SERVE
  1. The hot cheesy melting zucchini pizza is ready for you all.

  1. This is a unique pizza recipe which I came to know from my BF’s sister. After hearing it from her I cannot believe that without a pizza dough how a pizza can be made! Seriously when I prepared it she really opened my eyes. It turned out to be a really great pizza crust. And after having it one couldn’t understand also that it was made of zucchini.
