This Hakka Noodle is tossed with mixed vegetables and Chinese sauces and stir fired. It is a quick and easy recipe to make. This is a popular Chinese dish which makes a great one-dish meal. Ingredients
  • 15 oz (425 g) Noodles
  • Salt to taste
  • 6 to 8 pieces French beans
  • 1 medium size Onion or 2 tablespoon spring onion
  • ¼ small Cabbage finely shredded
  • 3 tablespoon Olive / white oil
  • 1 medium Carrot julienne or chopped small
  • ¼ teaspoon White pepper powder
  • 1 tablespoon Soy sauce
  • 1 Yellow bell pepper
  • ½ cup Bean sprouts
  • 1 tablespoon White vinegar
  • 2 Garlic cloves
  • 2 tablespoon Mushroom chopped
Instructions
  1. Heat 7 cups water in a wok.

  2. Add salt and place a colander in it.

  3. Now add little oil to the noodles and smear it as this will help to keep them non-sticky.

  4. Put the noodles in the colander and allow them to boil; don’t over boil, they would turn very soggy.

  5. Now slit the beans lengthwise and then cut them diagonally or cut into a diamond.

  6. Slice onion and shred cabbage.

  7. When the noodles are done, lift the colander with the noodles and put into another pan with cold water.

  8. Put on the flame to high.

  9. Add oil to a hot wok.

  10. When the oil turns hot, add garlic and fry till you smell the roasted garlic; don’t burn the garlic.

  11. Now if you want you can add mushroom and fry till they are lightly done.

  12. Add onions, French beans, carrot, and toss.

  13. Then add cabbage and again toss it.

  14. Remove the colander with the noodles from cold water and add to the vegetables.

  15. Add 1 tablespoon of oil, salt, pepper powder, soy sauce and toss on high flame.

  16. Now add bell pepper, bean sprouts, and vinegar and toss again.

  17. Toss, mix and sauté in sauces and fry for about 2 minutes.

  18. NOTE

    If you have a cast iron wok, do use it. It lends good smoky aroma to the noodles.

  19. SERVE

    Serve Veg Hakka Noodles hot.
