Ingredients
FOR MAKING THE BROTH
  • 1 Turkey carcass
  • 2 quarts Water
  • ½ teaspoon Salt
  • 1 medium Onion cut into wedges
  • 2 Bay leaves
FOR MAKING THE SOUP
  • 1 cup Uncooked long grained rice
  • 1⁄3 cup Finely chopped celery
  • ¼ cup Chopped onion
  • 1 can Condense cream of mushroom soup or chicken soup
  • 3 medium Carrots sliced
Instructions
  1. Place the turkey carcass in a stockpot and add the water, onion, salt and bay leaves.

  2. Slowly bring it to a boil over low heat.

  3. Simmer the flame and cover it for 2 hours.

  4. Then remove the carcass and cool it.

  5. Now strain the broth and skim the fat.

  6. Then discard the onions and bay leaves.

  7. Now return the broth to the pan.

  8. Add the carrots, rice, celery and chopped onions.

  9. Cover the lid and simmer until rice and vegetables are tender.

  10. Now remove the turkey flesh from the bones.

  11. Then discard the turkey bones and cut the flesh into bite-size pieces.

  12. Now add the turkey pieces and cream soup to the broth and heat through.

  13. When it turns slightly thicken, remove from the flame.

SERVE
  1. Serve it in a soup bowl and have it hot.
