Since childhood, I used to notice my mom used to cook the leftover turkey carcass and store it for day long. Later I realized that this homemade turkey broth adds wonderful flavor to soup and it can be refrigerated to use at any time.

Ingredients
  • 1 Turkey carcass
  • 2 quarts Water
  • ½ teaspoon Salt
  • 1 medium Onion cut into wedges
  • 2 Bay leaves
Instructions
  1. Place the turkey carcass in a stockpot and add the water, onion, salt and bay leaves.

  2. Slowly bring it to a boil over low heat.

  3. Simmer the flame and cover it for 2 hours.

  4. Then remove the carcass and cool it.

  5. Now strain the broth and skim the fat to store in a large container.

  6. Then discard the onions and bay leaves.

  7. Let the stock cool slightly and refrigerate it.

OUR PANTRY
  1. You can use this broth within 4 days or freeze it. Sometimes I wonder why chicken will get all the love. Give some part of share to turkey even and discover deeply flavorful base for soups and other dishes.
