When I visited Ladakh last year, I found that people over there are crazy about eating super hot sauce which is known as “sepen” in their local language. May the name suggest to be very hot but it is pretty mild. When I had it, I really loved its flavor. Since then I have been thinking of making this recipe so I tried my hands.

When I visited Ladakh last year, I found that people over there are crazy about eating super hot sauce which is known as "sepen" in their local language. May the name suggest to be very hot but it is pretty mild. When I had it, I really loved its flavor. Since then I have been thinking of making this recipe so I tried my hands.

Ingredients
  • 3 stalks Celery
  • 9 Tomatoes
  • 2 Red jalapeno peppers or Szechuan pepper
  • 2 cloves Garlic
  • ½ teaspoon Salt
  • Few sprigs of Cilantro
  • ½ teaspoon Salt
  • ¼ cup Avocado oil
Instructions
  1. In a blender, blend the garlic, tomatoes and Szechuan pepper.

  2. Now heat oil in a pot.

  3. When the oil turns hot, add the blended tomato mixture and cook it over medium-high heat.

  4. Once the tomato sauce comes to a boil, dice the celery and add to it.

  5. Then add the salt to the sauce and stir it very well.

  6. Let the sauce boil for about 5 minutes.

  7. Now turn the flame down to medium and cook for another 45 minutes stirring every 15 minutes.

  8. After 45 minutes, turn down the flame little more.

  9. Then cook it for 15 minutes or until it reaches a thick consistency.

  10. Once done, roughly chop the cilantro and add to it.

SERVE
  1. Your sepen is ready to be eaten up ideally or with hot Momos.

  1. It’s a very tasty and mildly spicy sauce. In Tibetan restaurant, the steamed momos are served with this hot sauce. It also can be a great dip to have with Potato Wafers. I encountered this recipe and barely loved it.
