Ingredients
  • 1 tablespoon Canola oil
  • 2 chopped Garlic
  • 8 oz (225 gram) High rice noodles
  • Few Shallots chopped
  • 2 cups Pumpkins cubed
  • 1 tablespoon Fresh ginger grated
  • 1 can Coconut milk
  • 1 teaspoon Dark brown sugar
  • 2 cups Chicken stock
  • 1 lb (450 gram) Large shrimp peeled and de-veined
  • 1 cup Snow peas
  • 2 tablespoon Fresh lime juice
  • 1 tablespoon Fish sauce
  • Fresh basils for serving
  • 1 Thai roasted red chili paste
Instructions
  1. Firstly, boil the noodles according to the package directions.

  2. Now in a saucepan, heat oil over medium-high heat.

  3. Add garlic and shallots and stir it until fragrant, for 1 minute.

  4. The add the Chicken Stock, coconut milk, chili paste, pumpkin and brown sugar.

  5. Bring it to boil by reducing the heat to simmer and stir it occasionally until the pumpkins are tender, for about 12 minutes.

  6. Now add the shrimp and boil until it is opaque throughout, for about 2 minutes.

  7. Then add the snow peas and cook until it is bright green, for about 1 minute.

  8. Stir in the lime juice and the Fish Sauce.

SERVE
  1. Now in a 4 serving bowl divide the noodles and top it with soup and basil.

  1. This soup is very tasty and has a great look especially for the presence of pumpkin. It’s a one-pot whole meal. You can even have it with Toast or Brown Bread to fulfill your appetite. Especially, those who like to have light dinner at night, it is perfect for them.
