This weekend I will be out of the station, so there is really so much to prepare for my upcoming trip. I have very less time to prepare junk dishes. This teriyaki chicken makes me obsessed just because it is easy and really takes 20 minutes which will be super helpful for me and it is also healthy. Well, to be healthy is a relative term depending on how you eat, but it is totally for us. 🙂

Ingredients
  • 4 cups Fresh broccoli
  • 1 Large chicken breast boneless and skinless; sliced into 1-inch cubes
  • 1 tablespoon Vegetable oil
FOR THE SAUCE
  • ½ cup Soy sauce
  • ¼ cup Water
  • 2 tablespoon Rice vinegar
  • ¼ cup Dark brown sugar
  • 2 tablespoon Cornstarch
  • 2 cloves Garlic minced
Instructions
  1. In a bowl, whisk together all the ingredients for the sauce and set aside.

  2. Now bring a pot of water to boil and add the broccoli.

  3. Blanch the broccoli for 5 minutes.

  4. Then immediately transfer the broccoli in a large bowl of water with ice in it and set it aside.

  5. Now in a skillet, over medium-high heat, pour vegetable oil, add the chicken breast and brown it on both sides.

  6. Then add the broccoli straining from the water well and turn the heat down to medium.

  7. Now gently pour in the Sauce and let it thicken, for about 5 minutes.

  8. Gently toss the ingredients into the sauce until everything is coated well.

SERVE
  1. Serve it over rice and have a delicious meal.
