At the dinner table, all is well. The food is gone, the dessert is in. One simple recipe from momma’s hand was whipped every holiday in our home. It was creamy, fluffy and fruity. It never lasted especially with company. It is none other than strawberry and cream sandwich sponge. I always hovered near to reach the head of the line. I used to take a minute to finish it off and my friend used to think it as a winner. Today with a smooth wiping motion I am sharing my momma’s special dessert. It is done in just minute and never left over.

Ingredients
  • 8 oz (225 gram) Unsalted butter plus extra for greasing
  • 1 teaspoon Pure vanilla extract
  • 8 oz (225 gram) White caster sugar
  • 8 oz (225 gram) Self-raising flour
  • 4 large Free range eggs
  • 1 teaspoon Baking powder
  • 1 splash of Milk
FOR THE FILLING
  • 7 fl oz (200 ml) Double cream
  • 1 Vanilla pod
  • 1 ½ tablespoon Icing sugar plus extra for dusting
  • 8 oz (225 gram) Fresh strawberries
Instructions
  1. Preheat the oven to 180⁰ C / gas mark 4.

  2. Grease and line the bases of 2 round 20 cm sandwich tins.

  3. Now cube up the butter, cream together with the sugar in a large mixing bowl until pale and fluffy.

  4. Then mix vanilla extract in it.

  5. Now beat the eggs and gradually mix it into the creamed butter and sugar.

  6. Sift, then fold in the flour, baking powder and ¼ teaspoon of sea salt and mix it until just incorporated.

  7. Now add 1 splash of milk to loosen the batter.

  8. Then evenly divide it between 2 cake tins.

  9. Now bake the cakes in the oven for 20 to 25 minutes or until golden or cooked through.

  10. NOTE

    To taste it insert a skewer into the middle of a cake, if the cake is ready the skewer will come out clean.

  11. Then take it out from the oven and leave to cool in the tins for 5 minutes.

  12. Now turn onto a wire rack to cool completely.

  13. Once completely cooled, pour the cream into a large bowl, scrape in the vanilla seeds and whisk until you have soft peaks.

  14. Now sift in icing sugar and gently fold through.

  15. Place one of the cakes on chosen plate or cake stand and spread of the vanilla cream.

  16. NOTE

    Don’t spread vanilla cream right to the edges or it will spill later.

  17. Hull or roughly slice the strawberries and scatter on top of the second cake.

SERVE
  1. Now dust with icing sugar and decorate with extra strawberries if you wish and serve.
