Steamed Pork Dumpling

Me and 5 of my buddies went for a short road trip to Ladakh last month. It was winter time and the tour was very adventurous and challenging because of tremendous snowfalls and rough sketch roads. We were literally freezing out till we saw a roadside food stall. We halt there and we found the local girls are busy preparing hot steamy dumplings. It grabbed our attention and we ordered a plate of pork dumpling for each. Honestly, it was heaven inside the mouth. It also heated up our body and somewhat gave relief from the bone-chilling cold.

Ingredients
  • 2 tablespoon Dry yeast
  • 1 tablespoon Sugar
  • ½ cup All-purpose flour
  • ½ cup Water
FOR THE DOUGH
  • 3 cup All-purpose flour
  • 1 cup Water
  • 1 teaspoon Kosher salt
  • ¼ cup Sugar
  • 2 tablespoon Vegetable oil
FOR THE FILLING
  • 1 lb (450 gram) Ground pork if you want you can substitute with ground chicken
  • 4 Scallions chopped
  • 3 tablespoon Cilantro minced
  • 3-inch Fresh ginger peeled and minced
  • 1 tablespoon Rice wine vinegar
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
FOR THE SAUCE
  • ½ cup Soy sauce
  • 2 teaspoon Sesame oil
  • 2 teaspoon Chili garlic sauce
  • 1 tablespoon Rice wine vinegar
Instructions
FOR MAKING THE DOUGH
  1. In a small bowl add dry yeast, sugar, and water.

  2. Stir it together and let it sit for 30 minutes until it foams.

  3. Now in another bowl, add water, kosher salt, sugar and vegetable oil.

  4. Stir it together well and then slowly start to add flour.

  5. Once all flour is added, bring the dough together in a ball.

  6. Turn the dough out on to a floured surface and knead the dough until it is very soft about 10 minutes.

  7. NOTE

    If the dough is even very sticky, knead in more flour.

  8. Now place the dough in a lightly oiled bowl to rise until it triples, for about 2.5 to 3 hours.

MEANWHILE, LET’S PREPARE THE SAUCE AND THE FILLING
  1. For the sauce, in a bowl mix all the sauce ingredients and stir it well and chill it until needed.

  2. For the filling, mince the scallions, ginger, and cilantro very finely and place it in a bowl.

  3. Stir it and add other filling ingredients and set it aside until needed.

FINALLY, LET’S PREPARE THE DUMPLING
  1. Punch the dough and cut it into quarters.

  2. Working with 1 quarter at a time, stretch it out and flour it lightly.

  3. Then cut the dough into 12 pieces.

  4. Working with 1 piece at a time, make well in the middle and add about a tablespoon of filling in it.

  5. Then fold the ends up and over the filling, twist the top of the dough so it sticks together.

  6. Once you have 12 dumplings done, let them rest for 20 to 30 minutes before steaming them.

  7. Add the dumplings to a bamboo steamer leaving some space between each dumpling to prevent them from sticking together.

  8. Steam them over a pot or wok until they are steamed through, for about 18 minutes.

  9. NOTE

    To make sure that the dumplings don’t stick to the steamer, lightly oil the steamer or lay down some lettuce leaves in the bottom of the steaming racks.

  10. When it is done, take it out from the steamer and let the dumplings cool briefly.

SERVE
  1. Serve immediately with the sauce.
