So yesterday she skyped me asking about something new and fresh but her criteria were it has to be steamed. I suggested her this steamed recipe which she tried today and shared her experiences, which I’m going to share with you after the recipe.

Ingredients
  • 1 lb (450 gram) Chicken
  • 4 to 6 Chinese dried mushroom medium-sized
  • ¼ teaspoon Salt
  • Pepper to taste
  • 1 ½ tablespoon Soy sauce
  • 1 teaspoon Sugar
  • 1 teaspoon Sesame oil
  • 1 ½ tablespoon Cornstarch
  • 1 tablespoon Chinese rice wine
  • 2 slices Ginger shredded
  • 1 Green onion diced
Instructions
  1. Take a bowl of warm water and soak the dried mushroom for 20 minutes until they turn soft.

  2. Squeeze out the excess water and cut the stem off the mushroom and slice them thinly.

  3. Reserve the 1 tablespoon mushroom soaking liquid.

  4. Now with a heavy cleaver, chop the chicken through the bone into bite-size pieces.

  5. Then take a heatproof bowl and place the chicken in it.

  6. Add the pepper, salt, rice wine, Soy Sauce, sesame oil, sugar, reserved mushroom liquid, and cornstarch.

  7. Mix them very well and allow it to marinate for some time.

  8. Meanwhile, bring water to a boil.

  9. Then place a bowl in a pot for steaming or on a rack in a bamboo steamer.

  10. Now place the chicken pieces in the middle of the bowl and surround with the mushrooms.

  11. Sprinkle the shredded ginger and green onion over the top.

  12. Steam it over boiling water for 20 minutes until it is thoroughly steamed.

SERVE
  1. Once it is done, take out the steamy chicken with mushroom and serve it over rice.
