I remember the day when I shared the kitchen with my granny to prepare this spicy dish and today I’m going to relish those retro memories with you all.

Ingredients
  • 1 piece of 5.5 lb (2.5 kg) Leg of lamb
  • Ground pepper to taste
  • 1 tablespoon Honey warmed
  • 1 large pinch of Saffron threads
  • 2 tablespoon Ground almond
  • 2 fl oz (60 ml) Ghee (clarified butter)
  • 1 cup Greek-style yogurt
  • 2 Cinnamon sticks broken in half
  • 1 teaspoon Cloves
  • 8 Cardamom pods bruised
  • ½ cup Silvered almond
FOR THE MARGINATION
  • 3 cloves of Garlic chopped
  • 1 tablespoon Ginger chopped
  • 1 teaspoon Salt
  • 3 teaspoon Ground cumin
  • 1 ½ teaspoon Garam masala
  • ½ teaspoon Chili powder or paprika
  • ½ teaspoon Turmeric powder
  • 2 tablespoon Lemon juices
  • 1 tablespoon Vegetable oil
  • Few tablespoons Water
Instructions
  1. Trim all fat and silver skin from the lamb.

  2. Then using a small sharp knife make deep incisions all over the lamb.

  3. Now combine all marinating ingredients in a small food processor and process it until coarse paste forms.

  4. Rub the paste all over the lamb pushing it into the incisions as you go.

  5. Now season the lamb with ground pepper and place the lamb in a non-reactive dish.

  6. In a separate bowl stir together the saffron, ground almonds, honey and yogurt and mix it well.

  7. Pour this mixture over the lamb.

  8. Now turn the lamb to coat in the yogurt mixture and then cover it with a plastic wrap.

  9. Marinate it for 8 hours or up to 24 hours.

  10. Now preheat the oven to 350⁰ F or 180⁰ C.

  11. Transfer the lamb to the roasting dish which should be large enough to fit it snugly and spoon the yogurt mixture over it.

  12. Then in a frying pan over medium heat, heat the ghee and add the whole spices and cook by tossing the pan for 2 minutes or until the spices are fragrant.

  13. Now pour this mixture over the lamb.

  14. Scatter over the slivered almonds.

  15. Then cover the dish loosely with a foil.

  16. Now roast the lamb for 2 to 2 ½ hours or until the juices are still running little pink.

  17. Add a few tablespoons of water to the dish occasionally to stop the yogurt mixture catching around the edges.

  18. Once done remove the lamb from the oven and let it rest for 20 minutes.

SERVE
  1. In a plate carve the roasted lamb leg in thick slices and serve to your guests. Pour the pan juices into a sauceboat and serve alongside the lamb.

  1. This is one of the celebrating dishes in my house. Whenever we all get time at home, we sit on around dine table and place the master bluster “The Lamb Leg” in the middle of the table. It seems like a royal throne surrounded by ministers and it grabs everyone’s attention on the plate. This tremendously delicious recipe can be combined with pilau assorted with Cucumber Raita or Herb Yogurt Raita.
