Ingredients
  • 1 lb (450 gram) Medium shrimps shelled and deveined
  • ½ lb (225 gram) Unsalted butter
  • Salt for seasoning
  • Freshly ground black pepper for seasoning
  • 2 tablespoon Lemon juice
  • ¼ teaspoon Cayenne pepper
  • ¼ cup Sherry cream
Instructions
  1. In a skillet, melt 6 tablespoons of butter.

  2. Then add the shrimp and ½ teaspoon of salt and black pepper.

  3. Over high heat, stir it until the shrimp are pink and cooked through, for about 5 minutes.

  4. Now transfer the shrimp to blender.

  5. Again, put the skillet to a high heat and add the lemon juice, sherry cream, and cayenne pepper.

  6. Stir it until it gets reduced to 3 tablespoons, for about 3 minutes.

  7. Once done, pour this hot liquid over the shrimp and process it until it turns smooth.

  8. Then give a pause and again add the remaining butter 1 tablespoon at a time.

  9. Process it until it turns smooth and silky.

  10. Once it is done, transfer the shrimp paste to a bowl and let it cool.

  11. Wrap it with plastic wrap onto the surface of the paste and refrigerate it for at least 1 day.

  12. Next day bring it to the room temperature before using.
