This crispy, spicy deep fried snack with a flaky outer layer and rich feeling of mashed potatoes. Starting from all ages, it’s a favorite snack and it’s a must try for you too.

Ingredients
FOR THE SHELL
  • 1 teaspoon Carom seeds
  • 3 tablespoon Ghee (clarified butter)
  • Salt to taste
  • 1 ½ cup All-purpose flour
FOR THE FILLING
  • ½ cup Green peas
  • ½ teaspoon Cumin seeds
  • 3 Medium potatoes
  • 1 tablespoon Green chili ginger paste
  • ½ teaspoon Red chili powder
  • ½ teaspoon Garam masala powder
  • 1 teaspoon Dry mango powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Fennel seeds powder
  • 2 tablespoon Coriander leaves finely chopped
  • Salt to taste
  • 2 tablespoon Oil Plus more for frying
Instructions
  1. In a pressure cooker, add salted water.

  2. Add potatoes and green peas in it and pressure cook it until it turns soft.

  3. After boiling, transfer them to a colander and let it cool.

  4. Then peel the potatoes and lightly mash them and keep it aside.

MEANWHILE PREPARE THE SHELL
  1. In a white bowl, add all-purpose flour, carom seeds, salt and clarified butter.

  2. Combine them very well with your hand.

  3. When it will turn crumbly, then add water gradually and knead it into a firm dough.

  4. Once done, cover it with a wet cloth and let it sit for 20 minutes.

LET’S PREPARE THE FILLING
  1. In a pan heat 2 tablespoon of oil over medium heat.

  2. Then add cumin seeds and green chili-ginger paste and stir it for a minute.

  3. Now add the boiled green peas and stir fry it for a minute.

  4. Add red chili powder, garam masala powder, coriander powder, dry mango powder, and fennel seeds powder and combine it very well.

  5. Now add the mashed potato and mix them very well for about 3 minutes.

  6. Add salt according to the taste.

  7. Lastly, add the coriander leaves and give a good stir.

  8. Then switch off the flame and let it cool in a bowl at a room temperature.

FOR PREPARING THE SAMOSA
  1. Remove the wet cloth and knead the dough again and make it smooth.

  2. Divide it into 6 small portions and make round shape balls from it.

  3. Take 1 dough ball at a time and press it between your palm to flatten it a bit.

  4. Then put it on a rolling board and roll it out into round shape across the 6-inch diameter.

  5. Now cut it into 2 semi-circles.

  6. Then with a brush spread water on the cut side edge to moisten the surface.

  7. Now take one semi circle and give it a shape of a cone by overlapping one side over the another and press them to seal the sides.

  8. Put one pea at the bottom of the cone to keep its shape.

  9. Now put 3 tablespoons of filling inside the cone.

  10. NOTE

    Don’t overfill it.

  11. Then wet the edges with a moist finger and press it tightly with your thumb and index finger to seal them.

  12. Now in a pan heat oil over medium flame.

  13. When oil turns medium hot, add 3 samosas at a time and fry them by reducing the flame to low.

  14. Deep fry them on low to medium flame until they turn golden brown.

  15. Once done, transfer them to a paper towel.

SERVE
  1. Your crispy spicy samosa is ready to serve with Tomato Ketchup or Mint Dip.
