Ingredients
FOR PASTRY DOUGH
  • 1 ½ tablespoon Granulated sugar
  • 1 ¼ cup All-purpose flour
  • ¼ teaspoon Salt
  • 1 Egg yolk
  • 2 ½ tablespoon Ice water
  • ½ teaspoon Vanilla extract
  • 7 tablespoon Butter cut into pieces
FOR THE FILLING
  • ½ cup Whole milk
  • ¾ cup Whipping cream
  • ½ oz (14 gram) Bittersweet chocolate chopped
  • 1 Egg yolk
  • 1 Egg
FOR SALTED CARAMEL
  • 6 tablespoon Salted butter at room temperature
  • 1 cup Granulated sugar
  • ½ cup Heavy cream
  • 1 teaspoon Salt
Instructions
FOR MAKING THE DOUGH
  1. In a bowl, add the flour, sugar, and salt and whisk it.

  2. Then in a separate bowl whisk together the egg yolk, vanilla and ice water.

  3. Pour this into the flour mixture.

  4. Mix it very well until well combined.

  5. Now cut the butter into the mixture until tea sized clumps form.

  6. Then knead the dough into a ball.

  7. Pat it flat and wrap in a plastic wrap and refrigerate for 1 hour.

  8. Now roll it out into a circle, approx. 1⁄8 inch thick and place it in a tart pan.

  9. Then trim the dough so that it flush with the rim.

  10. Place a piece of aluminum foil over top and pour in some pie weights.

  11. Once it is done, allow it to cool.

FOR MAKING THE FILLING
  1. In a saucepan over medium heat, add whole milk, heavy cream and heat it until the mixture starts boiling.

  2. Then remove it from the heat and stir in the chocolate until the mixture becomes smooth.

  3. Now in a bowl, whisk egg together.
  4. Slowly pour about ¼ mixture into the egg.
  5. Whisk it vigorously to combine.
  6. Now slowly pour the mixture back into the pan and heat it, whisking it to combine.

  7. Then pour this filling into the tart and place in the oven for 325° F or 160° C for 30 minutes or until it sets.
NOW FOR MAKING THE SALTED CARAMEL
  1. Heat the granulated sugar in a saucepan over medium heat.

  2. Stir it constantly to prevent burning.
  3. Once the sugar has melted completely, add the butter.
  4. NOTE

    The mixture will start to bubble.

  5. Continue stirring for 2 minutes or until the butter has completely melted.

  6. Then add the cream and boil for a minute.

  7. Once done, remove it from the heat and add the salt.

  8. Now allow the caramel to cool for about 10 minutes.

  9. Then pour the caramel over the tart.

  10. NOTE

    Be careful that it doesn’t spill over the crust.

  11. Place the tart in the refrigerator to chill for 2 hours.

SERVE
  1. Once the tart is ready, garnish it with flakes of sea salt and have a sweet slice.
