- 3 lb (1.35 kg) Small white potatoes
- 1 ½ teaspoon Kosher salt
- ¼ cup Olive oil
- 2 tablespoon Minced garlic
- 1 teaspoon Freshly ground black pepper
- 2 tablespoon Fresh parsley minced
Preheat the oven to 400° F or 200° C.
Now cut the potatoes into halves.
Then take a bowl and place the potatoes.
Add the olive oil, salt, pepper, and garlic and toss them until the potatoes are well coated.
Now take a baking sheet pan.
Transfer the potatoes onto it and spread out into one layer.
Roast in the oven for 45 minutes to 1 hour or until potatoes are brown and crisp.
Flip twice during roasting in order to ensure evenly brown.
Then remove the potatoes from the oven.
Sprinkle the minced parsley and serve hot.
