It turns out a lovely moist delicious bird with a tasty stuffing and gravy. This method can be used for roast chicken or turkey. Whenever I see a whole roasted chicken, juicy and warm, I get this hunger pang attack and my tummy simply starts rumbling. Ingredients
  • 1 Whole chicken 3.3 lbs (1.5 kg)
FOR MARINATING
  • 2 tablespoon Fresh unsweetened yogurt
  • 2 tablespoon Lime / lemon juice
  • 2 tablespoon Garlic paste
  • 1 teaspoon Ginger paste
  • ½ teaspoon Red chili powder
  • ½ teaspoon Turmeric powder
  • ½ teaspoon Salt
FOR THE FILLING
  • 3 tablespoon Vegetable / canola / sunflower cooking oil
  • ¾ teaspoon Cumin seeds
  • 2 medium sized Onions chopped fine
  • 2 teaspoon Garlic paste
  • 1 teaspoon Ginger paste
  • 1 tablespoon Coriander powder
  • 1 teaspoon Cumin powder
  • 10 oz (300 gm) Minced / ground meat you can use beef or lamb or whole boiled eggs
  • Salt to taste
  • 2 medium sized Tomatoes chopped fine
  • 1 cup Fresh / frozen peas
  • 1 cup Chopped potatoes skin removed
  • 1 teaspoon Lime / lemon juice
  • ¼ cup Fresh coriander leaves finely chopped
  • 3 tablespoon Vegetable / canola / sunflower cooking oil to drizzle on chicken when roasting
Instructions
  1. Wash chicken, remove innards. When done pat dry and make an incision.

  2. Put all ingredients for the marinating in a large bowl.

  3. Mix it well.

  4. Put the whole chicken into this marinating mixture and coat well with it.

  5. Cover the dish with cling wrap and keep aside for 2 to 3 hours in the refrigerator.

WHILE THE CHICKEN MARINATES, LET US PREPARE THE FILLING
  1. Heat 3 tablespoons of cooking oil in a wok or deep pan, on medium heat.

  2. Add the cumin seeds and fry for 1 minute.

  3. Add onion now. Fry till they turn a pale golden color.

  4. Add the ginger and garlic paste and fry for 1 minute.

  5. Add minced meat and all the powdered spices – coriander, cumin, salt to taste.

  6. Continue to brown the minced meat, stirring often to prevent burning. This should take about 5 to 7 minutes.

  7. Add the tomatoes, peas, and potatoes.

  8. Stir and cook till potatoes are soft.

  9. Turn the fire off and add the lime juice and chopped coriander leaves.

  10. Mix them well.

FOR THE FINAL PROCESS
  1. Preheat oven to 175⁰ C / 350⁰ F / Gas Mark 4.

  2. Remove the marinated chicken from the refrigerator and fill the stomach cavity with the minced meat stuffing.

  3. Try and get all the stuffing in it.

  4. Put in a baking/roasting dish and drizzle all over with cooking oil.

  5. Roast the chicken, uncovered for 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180⁰ F / 82⁰ C.

  6. It will ideally be golden in color now.

  7. Remove from heat and baste with melted margarine or butter and drippings.

  8. Cover with aluminum foil and allow to rest about 30 minutes before serving.

SERVE
  1. Serve piping hot chicken roast with grilled veggies.

  1. Chicken Roast can be served with Lachcha Paratha or have ideally. The result is, as my family says, “yummy in my tummy”.
