Roasting is the traditional way of cooking in our home. I still remember, when I used to come back from boarding to my sweet home during vacation time, my grandmom and my mom used to be very busy for preparing my favorite dishes and in that list roasted dishes were compulsory. Today I’m going to share a nostalgic roasted beef recipe which was an epic dish for our family and my grandmom was the specialist in it.

Ingredients
  • 2 medium Onions
  • 1 bulb of Garlic
  • 3.3 lb (1.5 kg) Beef
  • 2 Carrots
  • Salt for seasoning
  • Bell pepper for seasoning
  • 1 bunch of Mixed fresh herbs
  • 2 sticks Celery
  • 2 tablespoon Olive oil
FOR THE GRAVY
  • 1 tablespoon Cornflour
  • 8.5 oz (250 ml) Beef stock
  • 2 tablespoon Red wine
Instructions
  1. Preheat the oven to 475° F or 240° C.

  2. Now chop the vegetables but don’t peel them.

  3. Take the garlic bulb and break it into cloves, unpeeled.

  4. Now in a roasting tray, drizzle with oil and pile up all the veggies, garlic and herbs into the middle of the tray.

  5. Then drizzle the beef with olive oil, season with salt and pepper and rub it all over the meat.

  6. Now place the beef on top of the vegetables.

  7. Then play the tray in the oven and turn down the heat immediately to 400° F or 200° C and cook it for 1 hour for medium beef.

  8. NOTE

    For wellness leave it in for another 10 to 15 minutes.

  9. NOTE

    If you want to roast potatoes along with it then it is the time to get them into the oven for the last 45 minutes of cooking.

  10. Now baste the beef halfway through cooking.

  11. NOTE

    If look the veggies look dry, splash water on the tray to avoid charring.

  12. When the beef is done, take out the tray and transfer the beef to a board and let it rest for 15 minutes.

  13. Now cover it with thin aluminum foil and leave it aside while you make your gravy.

TO PREPARE THE GRAVY
  1. Now add water, red wine, Beef Stock to the dripping to de-glaze.

  2. Then in a bowl dissolve the cornflour in a little water and add to the dripping pan.

  3. Keep on stirring so that it doesn’t form a lump.

  4. Now season it with salt and pepper to taste.

  5. Once done, pour it over the roasted beef.

SERVE
  1. Cut the roasted beef into a slice and serve.
