- 1 lb (450 gram) Boneless pork loin
- 1 Cucumber thinly sliced
- 3 tablespoon Cider vinegar
- 2 tablespoon Olive oil
- 2 teaspoon Brown sugar
- 1⁄3 cup Mayonnaise
- 4 Portuguese roll splits
- ½ teaspoon Cayenne pepper
- ½ teaspoon Kosher salt
- ½ teaspoon Black pepper
Heat the oven to 450⁰ F or 230⁰ C.
Season the pork with the cayenne pepper and ¼ teaspoon salt.
Now roast it on a rimmed baking sheet until an instant-read thermometer inserted in the center reaches 145⁰ F or 60⁰ C or for 20 to 25 minutes and then thinly slice the pork.
In a meanwhile, in a medium bowl combine the cucumber, vinegar, oil, brown sugar, ¼ teaspoon salt and black pepper and mix it well.
Now take the Portuguese roll and divide the mayonnaise, roast pork and pickled cucumber among the rolls.
