Ingredients
  • 1 cup Kidney beans / rajma
  • 1 cup Onion finely chopped
  • 1 cup Tomatoes finely chopped
  • 1 tablespoon Ginger paste
  • 1 tablespoon Ginger, garlic and green chili paste
  • 4 medium Garlic cloves
  • 1-inch Ginger
  • 2 Green chilies crushed to a paste
  • 1 teaspoon Coriander powder
  • ½ teaspoon Red chili powder or paprika powder
  • ¼ teaspoon Turmeric powder
  • 1 pinch of Asafoetida optional
  • ½ teaspoon Garam masala powder
  • ½ teaspoon Cumin seeds
  • 1 teaspoon Dry fenugreek leaves / Kasuri methi crushed
  • 3 tablespoon Butter
  • 3 tablespoon Cream
  • 4 cups Water for pressure cooking
  • 2 cups Rajma / kidney beans stock
  • Salt to taste
Instructions
  1. Rinse or soak the rajma or kidney beans overnight in enough water.

  2. Next day discard the water and rinse the rajma again in fresh water.

  3. Now in a pressure cooker take both the rajma and 4 cups water.

  4. Pressure cook on medium heat for about 20 minutes.

  5. When the pressure settles down on its own, open the lid and check whether the rajma is cooked or not by taking a bite or pressing a kidney bean.

  6. NOTE

    If they are not cooked completely then pressure cook again by adding some water.

  7. In a pan heat butter, add cumin seeds and let them crackle and get browned.

  8. Now add onions and sauté them till they are caramelized.

  9. NOTE

    Take care that onions don’t burn.

  10. Keep on stirring the onions and add the ginger, garlic and chili paste.

  11. Sauté it for 5 to 10 seconds on low flame.

  12. Now add the tomatoes and sauté them for 2 to 3 minutes till the tomatoes become soft.

  13. Then add all the spice powders including Garam Masala Powder and asafoetida.

  14. Stir it constantly and sauté the mixture until the fat starts leaving the gravy.

  15. Now by using a slotted spoon or a strainer remove the beans from the water and add them to the gravy.

  16. Mix it very well.

  17. Now add the Kidney Bean Stock and salt and mix the whole gravy mixture.

  18. Simmer it without a lid for 10 to 12 minutes or more till the gravy thickens slightly.

  19. NOTE

    It should not be watery.

  20. With a spoon mash few kidney beans. This will help to thicken the gravy.

  21. When the rajma masala is thickened and comes to the right consistency, then add the crushed dry fenugreek leaves and cream.

  22. Stir and simmer rajma gravy for 30 seconds and then switch off the flame.

SERVE
  1. Hotpot rajma masala is ready to serve as restaurant style and spread the joy of cooking.

Kidney beans are very nutritious and turn out beautifully when cooked with thick tomato paste and Indian aromatic spices. It is a classic recipe for a meal on a regular basis.
