- 2 lb (900 gram) Russet potatoes cut into ¼ inch slices
- 3 tablespoon Olive oil
- Freshly ground pepper for seasoning
- Pinch of Cayenne pepper
- Coarse salt for seasoning
- Vegetable oil cooking spray
