My bro lives in Vancouver and in every weekend, he makes a trip to an island, Grantville. There he purchases fresh seafood along with turkey and armful of tortellini from the supermarket as he is a great fan of seafood. This recipe was odd to my meal but after getting to know from him and preparing it for myself, it is no longer on my odd list.

Ingredients
  • 1 teaspoon Olive oil
  • 1 Medium yellow onion chopped
  • 2 Celery stalks diced
  • 2 Large carrots cut into half circles
  • 1 teaspoon Dried thyme
  • 3 Garlic cloves minced
  • 1 lb (450 gram) Ground turkey
  • 9 oz (255 gram) Cheese Tortellini
  • ¼ cup Flat leaf parsley minced
  • 5 ¼ cup Chicken broth
  • ¼ teaspoon Ground pepper
  • Salt to taste
  • 2 tablespoon Basil pesto
Instructions
  1. Heat a nonstick saucepan over medium-high heat and lightly coat it with cooking spray.

  2. Now add the ground turkey and stir it.

  3. Break it up until cooked through.

  4. Once done, drain and discard the liquid and transfer the ground turkey to a bowl.

  5. Now in the same saucepan, add olive oil and heat to medium heat.

  6. Then stir in the onion, carrot, and celery.

  7. Cook it until the vegetables turn tender for about 5 minutes.

  8. Then put the garlic, thyme, and pepper and stir it for 1 minute.

  9. Now add the basil pesto and the Chicken Broth.

  10. Bring it to boil by simmering for 10 minutes.

  11. Now add the ground turkey and the Tortellini until the tortellini turns tender, for about 5 minutes.

  12. Season it with salt and stir it once.

SERVE
  1. Remove it from heat, add the chopped parsley and serve hot.

  1. It’s a very soothing soup and comforting. It doesn’t take long hours cooking in the kitchen and then washing 20 pans. For a soothing dinner, you can have this pesto turkey tortellini soup with 2 bread toast or with Brown Bread.
