Ingredients
  • 1 medium Onion sliced
  • 5 Green chilies
  • ¼ cup Cashew nuts
  • 1 cup Water
FOR SPINACH PASTE
  • 6 cups Spinach
  • 5 cups Water
FOR PALAK PANEER
  • 10.5 oz (300 gram) Cottage cheese cut into ½ inch cubes
  • 1 teaspoon Ginger paste
  • 1 tablespoon Oil
  • 2 tablespoon Butter
  • 1 teaspoon Garlic paste
  • ¼ teaspoon Black salt
  • ¼ cup Tomato finely chopped
  • 1 teaspoon Garam masala
  • 2 tablespoon Heavy cream
  • Salt to taste
  • 1 teaspoon Dried fenugreek leaves
Instructions
  1. In a pan, add the onion, cashew nuts, chilies and water and bring it to a simmer; for about 15 minutes or until onions get soft.

  2. Meanwhile, blanch the spinach into a boiling water for about 5 minutes.

  3. Once done, immediately remove and put the leaves into ice cold water.

  4. After the onions turn tender, cool the mixture.

  5. Once it turns cool, in a blender blend the onion mixture into a smooth gravy then keep it aside.

  6. In the same blender, puree the spinach without adding water.

  7. Once it turns smooth paste, keep it aside.

FOR MAKING THE PALAK PANEER
  1. In a pan, add the oil and the butter.

  2. Once it gets heated, sauté the ginger paste and garlic paste for 30 seconds.

  3. Now add the tomatoes and stir it for 2 minutes.

  4. Then with a spatula smash the tomatoes.

  5. Add the onion paste and cook it for more 2 minutes.

  6. Now add the spinach puree and let it come to simmer by closing the lid.

  7. When the gravy turns bit thickened, add black salt, dry fenugreek leaves, Garam Masala, and salt and combine it well.

  8. Now gently put the paneer cubes and simmer it for 2 minutes.

  9. At last, add the cream and give a good stir and switch off the flame.

SERVE
  1. The hot spicy, creamy green gravy with cottage cheese is ready to be served.
