Ingredients
  • 2 lb (900 gram) Raw poussin
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • Fresh Dill to taste; optional
  • Thyme to taste; optional
  • Fresh lemon to taste; optional
  • Extra virgin olive oil for brushing
SPECIAL EQUIPMENT
  • Instant read thermometer
Instructions
  1. Preheat the oven to 425° F or 220° C.

  2. Now rinse the poussin with cold water, inside and outside and pat it dry with paper towel.

  3. Then put the poussin in a baking dish and brush all over with olive oil.

  4. Sprinkle the sea salt and freshly ground black pepper over the poussin.

  5. Now put the baking dish on the center rack in the oven.

  6. Bake the poussin for 40 minutes.

  7. Now check the internal temperature of the poussin with an instant-read thermometer.

  8. NOTE

    When the poussin is fully cooked, the internal temperature will be 165° F or 75° C.

  9. Then remove the poussin from the oven and loosely cover it with aluminum foil and then let it rest for 15 minutes.

SERVE
  1. After resting, slice and serve hot oven baked poussin.
