This sandwich is an all-time classic snack with simple ingredients. It is a fast yet flavorsome recipe.
- 2 Chicken breasts skinless
- 1 teaspoon Sunflower oil
- 2 tablespoon Low fat cream or Greek yogurt
- 2 Little gem lettuce
- 1 tablespoon Grated parmesan cheese plus a few for serving
- Little Lemon juice
- 1 teaspoon Capers roughly chopped
- 2 Thick slices bread
- 1 small clove Garlic cut into halves
- Salt to taste
- Black pepper to taste
Heat a griddle pan.
Rub the chicken with the oil and season with salt and pepper.
Then griddle the chicken breast for 7 minutes each side or until cooked through and set it aside to rest.
Meanwhile, separate the lettuce leaves.
Now in a bowl mix the cream, parmesan, lemon juice and caper with 1 tablespoon of cold water and then season it with salt and pepper to taste.
Then toast the bread and rub with the cut side of the garlic.
Then crush the garlic and add to the dressing.
Now slice the warm chicken breast on the diagonal, then top the toast with lettuce leaves, sliced chicken breast and a drizzle of the Caesar dressing.
Finish with a few shavings of parmesan and serve.
