Murg Malai Kebab

Ingredients
  • 1 lb (450 g) Chicken thigh bones removed and cut into 2-inch cubes
  • ½ teaspoon Freshly ground white pepper powder
  • ¼ teaspoon Cardamom powder
  • 1 tablespoon1 tablespoon Garlic paste
  • 2 teaspoons Ginger paste
  • ¼ teaspoon Salt
  • ½ cups Mild cheddar cheese or mozzarella cheese grated
  • ½ cup Sour cream
  • 2 Green chilies
  • ½ cup Fresh green coriander leaves
  • 1 tablespoon Vegetable / canola / sunflower cooking oil
  • 1 Lemon to garnish
Instructions
  1. NOTE

    Before the start keep in mind to wash your hand well.

  2. Pat the chicken dry with paper towel to help the marinade adhere to be better. When this is done, lay the pieces out neatly in a flat dish.

  3. Sprinkle the white pepper powder, cardamom powder and the first lot of salt over the chicken. Also, add the ginger paste and garlic paste.

  4. Mix thoroughly to ensure that the chicken is fully coated.

  5. Cover/cling wrap the dish and put in the refrigerator to marinate for 30 minutes.

WHILE THE CHICKEN IS MARINATING, LET US PREPARE THE REMAINING PASTE OF THE MARINATE
  1. First, put the grated cheese in a deep bowl and mash it with clean hands to ensure that it forms a paste.

  2. Now add the sour cream and salt to the cheese and continue to mash & mix so that there is no lump in the mixture.

  3. Grind the coriander leaves and green chilies into a coarse paste using a blender or a mortar and pestle.

  4. Add this coarse paste to the cheese – sour cream mixture and stir to blend well.

FOR THE FINAL PROCESS
  1. After the chicken gets marinated, add the above cheese - sour cream mixture and mix it very well to ensure all the chicken pieces are well coated.

  2. Now add oil to it and mix well again.

  3. Once it is done, leave the chicken to rest for 1 hour.

  4. While the chicken is marinating, turn on your microwave oven and preheat it. Set the temperature at 230° C / 450° F / Gas Mark 8. 

  5. NOTE

    You can also do this on barbecue or grill.

  6. This is the great time to soak your bamboo skewers in water so that they don’t burn during the cooking process.

  7. When the chicken has marinated for an hour, thread 3 to 4 pieces on each skewer. Thread the chicken pieces in the skewer in a flattened way. Ensure you place the chicken cubes in such a way that all the chicken cubes get exposed to the heat.

  8. When you threaded all the chicken onto the skewer, lay the skewers on a baking tray and put into your oven.

  9. Cook for 15 minutes.

  10. Remove and turn the skewers so the chicken pieces that was facing down, is now facing up.

  11. Put back into the oven and cook for another 15 minutes.

  12. When done, gently remove the chicken pieces from the skewers and arrange on a serving plate.

  13. NOTE

    You can also leave the skewers as is and serve as individual portions.

  14. SERVE

    Squeeze lemon juice on it and serve hot.
