Ingredients
  • ¼ cup Green beans cut into 1-inch pieces
  • ½ Cauliflower
  • ¼ cup Green peas
  • ¼ cup Carrot cubed
  • 1 inch Cinnamon stick
  • 2 to 3 Cloves
  • 1 Bay leaf
  • 2 teaspoon Coriander powder
  • 1 teaspoon Garam masala powder
  • 1 Tomato roughly chopped
  • 1 Green chili slit
  • 2 teaspoon Coriander powder
  • 2 tablespoon Ghee (clarified butter)
  • Finely chopped Coriander leaves for garnishing
  • ½ cup Water
  • Salt to taste
FOR SMOOTH PASTE
  • 1 Onion blanched
  • 2 to 3 Garlic
  • 2 inch Ginger
  • 8 to 10 Cashew nuts blanched
  • 1 Tomato
  • ½ teaspoon Cumin seeds
Instructions
  1. Firstly, grind the blanched cashew nuts along with chopped tomatoes, onion, ginger, garlic and cumin seeds to make a smooth paste and keep it aside.

  2. Now in a wok, heat the clarified butter.

  3. Then add the bay leaves, cloves, cinnamon sticks and let its flavor release.

  4. Add the sliced onion and sauté it till it becomes golden brown.

  5. Now add the green chili and chopped tomatoes and stir it for a few minutes.

  6. Then add the chopped vegetables and combine it very well.

  7. Put the coriander powder, chili powder, and Garam Masala Powder and mix it well.

  8. Season it with salt and add ½ cup of water.

  9. Let the vegetable cook by covering the lid.

  10. Once the vegetables are cooked, add the ground spice paste and stir it well.

  11. Simmer the flame for 10 minutes until the vegetables incorporate well along into the gravy.

  12. Once done, switch off the flame and garnish with finely chopped coriander leaves.

SERVE
  1. The hot mixed vegetable gravy is ready to be served in a bowl along with the main course dishes.

OUR DINE TABLE
  1. Before only I got the hint about this dish by tasting it. But now, after preparing it by my own I realized that yea it is really flavorful and simple to cook. Its magic lies in its spices which gives the royal taste to it. It is best to be served along with Paratha, Chapaties or with Jeera Rice.
