Ingredients
  • 0.5 lb (225 gram) Sweet potatoes
  • ¼ cup Evaporated milk
  • 24 Mini tart shells
  • 1 Large egg white
  • ¼ cup Light brown sugar
  • 1 teaspoon Pure vanilla extract
  • ¾ teaspoon Pumpkin pie spice
  • 72 Mini marshmallows
Instructions
  1. Arrange 24 mini tart shells in a 9 X 13 baking dish and preheat the oven to 350⁰ F or 175⁰ C.

  2. Now place sweet potatoes into a medium saucepan and bring to a boil.

  3. Boil them until the sweet potatoes are fork tender, for about 5 minutes.

  4. Now drain and allow the sweet potatoes to cook for few minutes.

  5. Then add the sweet potatoes to a blender and blend into a puree.

  6. Now add the evaporated milk, egg white, vanilla extract, brown sugar and Pumpkin Pie Spice to the puree and blend until fully incorporated and smooth.

  7. Then spoon or pipe the filling into the mini tart shells.

  8. Top each pie with 3 mini marshmallows.

  9. Then bake in the preheated oven for 13 to 15 minutes; the shell will be golden, the filling will be set and the marshmallows will be toasted.

SERVE
  1. Your mini sweet potato pies are ready. Serve them after cooling.
