Ingredients
  • 2 cups Ziti
  • 1 lb (450 gram) Ground lamb
  • Cooking spray
  • ½ Small onion chopped
  • 2 Garlic cloves chopped
  • 1 Large egg
  • 1 tablespoon Canola oil
  • ¼ cup Dry red wine
  • 24 oz (680 gram) Marinara sauce
  • ¼ cup Breadcrumbs
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 3 tablespoon Fresh flat leaf parsley chopped; plus more for garnishing
  • 3 tablespoon Fresh basil chopped; plus more for garnishing
  • 2 bunches Flat leaf spinach
  • 8 oz (225 gram) Bocconcini
Instructions
  1. Preheat the oven to 350° F or 175° C.

  2. Now grease a baking dish.

  3. Then in a pot of boiling salted water boil the pasta until al Dante.

  4. In another bowl, add the ground lamb, bread crumbs, onion, garlic, egg, ½ teaspoon pepper and 1 teaspoon salt.

  5. Mix them very well and shape it into 16 meatballs.

  6. Now in a skillet, heat oil over a medium heat.

  7. Add the meatballs and stir it occasionally until it turns brown on all sides, for about 8 minutes.

  8. Then add wine and gently scrape up brown bits from the bottom of the skillet.

  9. Now stir in Marinara Sauce, basil, spinach, and parsley and bring to simmer.

  10. Once done, remove it from heat and add it to the pasta.

  11. Now transfer the mixture to a baking dish, top it with cheese and bake it for about 25 to 30 minutes until cheese gets melted and edges are bubbly.

  12. Once done, let it stand for 10 minutes before serving.

SERVE
  1. Garnish it with basil and parsley and serve.

  1. My meatball and spinach baked ziti is ready and is looking great, fully cheesy from the top and I’m sure it’s eager to get in my mouth as fast as it can. It’s a complete one-pot dish which doesn’t need any combination or a side dish.
