Ingredients
  • 1 ½ tablespoon Coconut oil or vegetable oil
  • 1 medium Sweet potato cut into 1-inch cubes
  • 1 cup Dried green lentils or red lentils
  • 1 cup Onion diced
  • 1 Large Carrots sliced lengthwise and chopped
  • 1 tablespoon Curry powder
  • ½ teaspoon Ground turmeric
  • 1 teaspoon Ginger powder
  • ½ teaspoon Sea salt
  • Freshly ground black pepper
  • ½ cup Coconut milk
  • 3 ½ cup Vegetable broth or water
Instructions
  1. In a pot over medium heat, heat the oil.

  2. Sauté the onion until its turning little golden.

  3. Add the potatoes, lentils, carrots, turmeric powder, ginger powder and Curry Powder and start to combine everything.

  4. Now add the Broth or the water and bring to a boil.

  5. Reduce the heat to simmer and cook for 25 minutes or until the lentils and sweet potatoes are tender.

  6. Now stir in the ½ cup of coconut milk and season with salt and pepper as per taste.

  7. Give a stir once and switch off the flame.

SERVE
  1. Serve it warm as side dish.
