Ingredients
  • 3 Medium kohlrabi peeled and cut into spears
  • 1 ½ to 2 cups Water as needed
  • 1 handful Fresh Dill
  • 2 tablespoon Sea salt
  • 1 ½ teaspoon Mustard seeds
Instructions
  1. In the bottom of the quart jar, place the fresh dill and mustard seeds.

  2. Now combine it with water and salt and start to dissolve.

  3. Then pack kohlrabi spears on top of the herbs and spices; leaving 1 ½ inches headspace.

  4. Cover the vegetables with brine adding more water as needed to cover but leaving 1-inch headspace.

  5. Now cover the jar with an airtight lid and store it at room temperature 60⁰ F to 70⁰ F or 15⁰ C to 20⁰ C or until desired flavor and texture are achieved.

  6. The brine should turn cloudy and bubbly and the pickle should taste sour when done.

  7. NOTE

    If using a tight lid burp daily to release excess pressure. Once the excess pressure is released, put the tight lid on the jar and move to cold storage.

SERVE
  1. The pickle is ready to serve. You can preserve it for a month long; the flavor will continue to develop.
