Ingredients
FOR COOKING THE RICE
  • 1.5 cup Long grained rice
  • 5 cup Water
  • 1 Bay leaf
  • 2 Green cardamoms
  • 1 Black cardamom
  • ½ inch Cinnamon
  • 2 Cloves
  • 1 to 2 strands of Mace
  • 1 teaspoon Salt or as required
FOR TEMPERING THE RICE
  • 2 tablespoon White oil or clarified butter (ghee)
  • 2 teaspoon Cumin seeds
  • 1 Green chili chopped
  • 1 tablespoon Finely chopped coriander leaves
  • 1 Large onion thinly sliced
Instructions
FOR PREPARING THE RICE
  1. Rinse the rice grains till the water runs clear of starch.

  2. Then soak the rice for 30 minutes and then drain them and keep it aside.

  3. Now heat 5 cups of water, add all the whole spices.

  4. Then add the rice grains and salt.

  5. Simmer the rice on a low flame, uncovered.

  6. Cook the rice grains until tender and yet separate.

  7. Then drain the water and keep the steamed rice aside.

  8. NOTE

    If you want you can rinse also the rice at room temperate. This stops the cooking of the rice and keeps the grain separate.

FOR PREPARING THE JEERA RICE
  1. Heat oil in a small pan or clarified butter.

  2. Add the cumin seeds and let them crackle.

  3. NOTE

    The cumin has to be fried well otherwise you will taste uncooked cumin in the rice.

  4. Now add the sliced onions and green chilies and stir it for a few seconds.

  5. NOTE

    No need to ground the chilies.

  6. Now add this tempering to the hot or warm rice.

  7. With a fork, gently mix the tempering with the rice grains.

  8. NOTE

    Be careful that the rice grains don’t break.

SERVE
  1. Now add the coriander leaves and gently mix with the jeera rice at the time of serving.

  1. This is one of the most after sought rice dish in our home, especially when we have heavy side dishes liken Chicken Butter or Chicken Tikka Masala or even for Dal Makhani (lentil curry). This rice is very lightly and presence of cumin helps to digest the foods better.
