Kulfi is actually a renowned Indian ice cream. From street-side stalls to ice-cream parlors, you will find kulfi with variant flavors and one of them is mango kulfi. As summer is in, we are looking forward to light shower with cool weather and so this kulfi will be the refreshing dessert for all of us. Since childhood, I have a great fantasy for this Indian style ice-cream and I love to prepare it for myself to satisfy my soul.

Ingredients
  • 2.5 cups Milk or almond milk
  • ¼ cup Sugar
  • 2.5 cups Mango puree Alphonso mangoes preferred
  • 1 pinch of Saffron
  • 12 to 15 Unsalted pistachios blanched, peeled and sliced
  • 2 to 3 tablespoon Almond paste optional
  • 3 tablespoon Rice flour or corn flour dissolved in 3 tablespoon milk
FOR SERVING
  • ¼ teaspoon Cardamom powder
  • Falooda Vermicelli
  • Rose syrup
Instructions
  1. In a pan, on a low flame let the almond milk heat gently.

  2. NOTE

    Don’t boil the almond milk and if using cow milk then simmer on a low flame for about 15 minutes.

  3. Now add the saffron and stir it.

  4. Then add sugar and stir it well till the sugar gets dissolved.

  5. In a separate bowl dissolve the rice flour in 3 tablespoon milk.

  6. Then add the rice flour paste to the milk and keep on stirring to avoid lumps.

  7. NOTE

    Remember to keep the flame low and stir in between.

  8. Continue to heat until the mixture thickens.

  9. When it is done, switch off the flame.

  10. Now add the almond paste and stir it.

  11. Then let the mixture to cool.

  12. Now add the mango puree, chopped pistachios slices and combine it well.

  13. Pour the mango kulfi into serving bowls or steel tumbler or kulfi molds and freeze it for 8 to 10 hours.

SERVE
  1. When it is frozen, serve the mango kulfi topped with saffron, sliced pistachios, cardamom powder or falooda along with rose syrup.

  1. For Indian’s summers and kulfis go together. As summer has already arrived so kulfi starts beckoning. If any of my friends visit India, you will find kulfi vendors serve kulfi on large nice eco-friendly leaves instead of plastic and artificial places which also enhances the flavor.
