Ingredients
  • 2.2 lb (1 kg) Chicken without skin
  • 3.5 oz (100 gram) Hung card
  • 2 teaspoon Garlic paste
  • 2 teaspoon Ginger paste
  • 2 teaspoon Onion paste
  • 1 teaspoon Chili paste or paprika powder
  • 4 Bay leaves
  • Salt to taste
  • ½ teaspoon Sugar
  • 2 teaspoon Turmeric powder
  • 2 teaspoon Tomato sauce
  • 8 pieces Potatoes halved breadthwise
  • 1.7 oz (50 gram) Onion chopped
  • 10.5 oz (300 gram) Mustard oil or vegetable oil
  • 2 teaspoon Garam masala powder
  • 1 tablespoon Ghee (clarified butter)
  • Fresh green coriander leaves for garnishing
Instructions
  1. Marinate the chicken with curd, garlic, ginger, onion, and chili paste and put in the freezer with covered lid for 1 hour.

  2. Now put the flame on and fry the potatoes in a pan until light brown and set them aside.

  3. Then fry 1 oz (approx. 25 gram) chopped onions till they are golden browned and remove from heat.

  4. In the same oil now add the rest of chopped onions and bay leaves and sauté them.

  5. Then add the marinated chicken to it and stir it for 2 to 3 minutes.

  6. Put chili powder, turmeric powder, salt, and sugar and mix it well with the chicken.

  7. Add the tomato sauce in it; stir it constantly till the oil is infused with the spices.

  8. In a meanwhile boil 4 cups of water. It should be lukewarm.

  9. Now add the lukewarm water and fried potatoes to the chicken and cook it.

  10. When the water level decreases and the gravy thickens, the chicken tender and is almost ready.

  11. Switch off the flame and add the Garam Masala Powder and fried onions; mix it well.

SERVE
  1. Garnish with coriander leaves and serve pot hot Indian chicken curry with fried potato.
