Ingredients
  • 1 cup Diced onion
  • 2 tablespoon Olive oil
  • 2 to 4 Habanero pepper or small hot chili pepper halved and seeded
  • 1 lb (450 gram) Tomatoes diced
  • 4 cloves Garlic minced
  • 1 cup Distilled white vinegar
  • 2 Medium Chili peppers Poblano preferred; diced
  • 2 teaspoon Salt
  • 1 to 3 teaspoon Sugar
Instructions
  1. In a saucepan, over medium-high heat, heat oil.

  2. Now add onions, chili pepper, habanero, and garlic.

  3. Stir it until the onion is soft and begin to brown, for about 3 to 4 minutes.

  4. Reduce the heat to medium.

  5. Add tomato, vinegar, salt and sugar to taste.

  6. Stir then well until the tomatoes become soften, for about 5 minutes.

  7. Now transfer the tomato mixture to a blender and puree it until it turns smooth.

  8. Then take a fine mesh sieve over a bowl and pour the pureed mixture through the sieve.

  9. Discard the residue and extract all the liquid.

  10. Now let the sauce cool to room temperature, for about 1 ½ hour.

SERVE
  1. The hot sauce is ready. After it cools down store it in a glass bottle for later usage.
