Hot pepper sauce is very much in Thai cuisine. Almost in most of the Thai dishes, this sauce is compulsory and this pepper sauce recipe is one you will turn to again and again. At the end of every summer, my bro gathers brunch of peppers from our garden and I love to make a number of jars full of this sauce.

Ingredients
  • 1 tablespoon Sugar
  • 30 Thai chili or jalapenos small
  • 1 teaspoon Salt
  • 1 cup Vinegar
  • 1 teaspoon Olive oil
Instructions
  1. In a saucepan, over medium heat add sugar, salt, vinegar, olive oil and allow it to boil.

  2. Now take a jar and fill it with chilies and pour the hot vinegar mixture over the chilies and leave about 1-inch headspace from the top of the jar.

  3. Remove the air bubbles from the jar and place the lid on top.

  4. Now allow the jar to seal by setting on the counter top to cool with about 1 inch in between each.

  5. After 12 hours, by pressing a finger to the center of the lid test the seal, if it sealed then it will not pop back. If it is not sealed, then refrigerate it.

SERVE
  1. When it is done, it is ready to use or you can store it in a dark cool place for up to a year.

  1. This hot pepper sauce turns out to be a hot accompaniment to a food. Dip in a spoon, scoop out a small blob of the sauce and bring the bite to your mouth; you will explode on contract and every part of your mouth will aflame.
