Herb Chicken Omelet
This is the perfect dish if you have some leftover chicken. Say if you had roasted chicken for dinner the night before, chicken breast off the grill or an extra piece of chicken you could not finish; this recipe is a great way to utilize it next morning for breakfast. You can even prepare chicken separately. This combo pack of all ingredients, chicken, and egg is a quick flip and would have a perfect high protein, low-fat breakfast.

- 4 Eggs
- 1 Green onion sliced
- 2 tablespoon Fresh parsley minced
- ¼ teaspoon Salt
- ¼ teaspoon Dried tarragon
- ¼ teaspoon Crushed pepper
- 1 tablespoon Butter
- ½ cup Cooked chicken cubed
- ½ teaspoon Celery seed
In a small bowl, beat the eggs.
Now add onion, parsley, salt, tarragon, and pepper to it and mix it thoroughly.
In a small skillet over medium heat, melt the butter.
Add egg mixture to it.
As egg sets, lift the edges; letting uncooked portion flow underneath.
Sprinkle with Cooked Chicken and celery seed.
When egg sets, remove it from the heat.
Fold the omelet in half and serve it.
Enjoy the tender chunks of leftover chicken provides a nice change of pace. Serve with Toast and tomato slices.
