Ingredients
  • 2 cups Rice rinsed and drained
  • 1 lb (450 gram) Ground beef or lamb
  • 2 cups Beef broth or lamb broth
  • ½ teaspoon Ground nutmeg
  • 2 to 3 teaspoon Seven Spices
  • 1 teaspoon Ground cinnamon
  • 1 tablespoon Olive oil
  • ¼ cup Pine nuts
  • ¼ cup Almonds blanched, peeled and silvered
  • Raisins for garnishing
Instructions
  1. Soak the rice in cold water for 15 minutes or until the rice grain breaks.

  2. When ready, drain well.

  3. Now in a cooking pot, combine the ground beef, cinnamon powder, salt, nutmeg, Seven Spices and cook over medium heat.

  4. Meanwhile in another pan heat 1 tablespoon of cooking oil and fry the pine nuts and almonds, then set it aside.

  5. Now top the beef with rice and season the rice with the salt stirring it constantly for few minutes.

  6. Season it with salt and on medium flame stir it constantly for few minutes.

  7. Now add the Beef Broth and bring to a boil.

  8. Reduce the heat to low and cover the lid and simmer it.

  9. Continue to cook by covering the lid until the water is absorbed and the rice is tender, for about 30 minutes.

  10. NOTE

    Add ¼ cup of water or salt if necessary.

  11. Now place a large serving platter on the opening of the rice pot.

  12. Carefully flip the pot content on to the platter so that the meat layer now tops the rice.

SERVE
  1. Garnish it with roasted pine nuts, almonds, and raisins before serving.

  1. This recipe is prepared with the combination of roasted nuts, dried fruits, and spices. It’s a glorious dish and I feel happy when I prepare it. It’s a one-pot meal to serve at lunch or dinner or a weekend party. Pair the hashweh with Spicy Lamb to have an overjoyed meal.
