Ingredients
  • ½ teaspoon Pepper
  • 2 lb (900 gram) Whole chicken
  • 1 teaspoon Salt
  • 2 tablespoon Fresh rosemary leaves chopped
  • 8 Green onions chopped
  • 2 tablespoon Lemon juice
  • 2 tablespoon Flat-leaf parsley chopped
  • 1 clove Garlic finely chopped
FOR GARNISHING
  • Parsley optional
  • Lemon juice optional
SPECIAL EQUIPMENT
  • Cooking thermometer
Instructions
  1. Place the drip pan directly under grilling area and arrange coal around the edge of the fire box.

  2. Then heat coals or gas grill for indirect heating.

  3. Now take a bowl and mix all the spices and herbs.

  4. Then place the chicken in a dish and rub the mixture over the skin of the chicken and 2 tablespoon mixture in the cavity of the chicken.

  5. Now insert a thermometer inside the thigh muscle which should not touch bone.

  6. Cover and grill the chicken, breast side up over drip pan or over unheated side of the gas grill at medium heat, for about 1 hour to 1 hour 10 minutes.

  7. When the thermometer reads 180° F or 80° C or, turn the chicken on the other side and grill till the juice of the chicken is no longer pink.

SERVE
  1. When it’s done, with a help of a tongue place it on a dish and garnish it with parsley and squeeze some lemon juice if desired.
