Ingredients
FOR MAKING THE SALSA
  • ½ Red onion sliced into thick rings
  • 1 Jalapeno
  • 1 Avocado sliced in half; pitted and peeled
  • 1 Mango peeled and cut into slices
  • 1 tablespoon Fresh mint leaves
  • 2 Lime halved
  • Olive oil
  • Salt to taste
  • Cracked black pepper to taste
FOR THE FISH
  • 4 tablespoon Jalapeno lime butter
  • 4 Whitefish fillets skinless
  • 1 Lime sliced into 8 rounds
Instructions
  1. First heat the grill for about 350° F or 175° C.

FOR MAKING THE SALSA
  1. Grill the mango, avocado, jalapeno, onion and lime for about 5 minutes or until char mark appears.

  2. Once done, dice the mango, avocado, onion, and jalapeno and keep it in a medium bowl.

  3. Now squeeze the lemon into the mixture.

  4. Season it with mint, olive oil, salt and pepper and refrigerate it until ready to serve.

TO PREPARE THE GRILLED FISH
  1. Take 4 large sheets of aluminum foil and place one piece of fish in the center of each foil and top each fillet with jalapeno lime butter and 2 lime slices.

  2. Now fold up the ends of the foil and seal it in the form of a packet.

  3. Grill the fish wrapped in aluminum over medium heat until cooked through, for about 5 minutes on each side.

  4. Once done, remove the fish from aluminum wrap and check the tenderness by piercing a fork into the fish fillets.

SERVE
  1. Take out the salsa from the refrigerator and serve with grilled white fish fillets.
