During Olympic Games, I was invited by one of my friend, Sarah to watch Usain Bolt sprint. She is a big fan of him. I was first introduced to this salad on that very day and I finished a bowlful of that salad with the same speed as Bolt finished the run. I’m a die-heart fan of shrimp and I was blown away by the taste of it.

Ingredients
  • 1 lb (450 gram) Uncooked large shrimp de-veined, peeled
  • 3 ears Fresh sweet corn husks removed and cleaned
  • 1 teaspoon Chili powder
  • 1 tablespoon Canola oil
  • ¼ cup Fresh lime juice
  • ½ teaspoon Kosher salt
  • 1 tablespoon Honey
  • 2 Large tomatoes cut into 8 wedges
  • 6 cups Romaine lettuce chopped
  • ½ teaspoon Ground cumin
  • 1 Small avocado pitted, peeled and diced
  • 1⁄8 Coarsely ground black pepper
Instructions
  1. First heat the gas or charcoal grill.

  2. Now in a plate put the shrimp evenly and sprinkle with chili powder and set aside.

  3. Then spay grill rack with cooking spray.

  4. Place the corn on grill over medium heat.

  5. Cover the grill and cook for 12 minutes, turning it occasionally.

  6. Now add shrimp to grill for last 6 minutes of cooking time and cook it turning once until shrimp are pink.

  7. Then cut the kernels from ears of corn and discard the cobs.

  8. Now in a small bowl stir the lime juice, oil, honey, salt, cumin, and pepper with a whisk and set it aside.

  9. Then in another large bowl, stir together shrimp, corn, lettuce, and tomatoes and drizzle with dressing tossing it well.

  10. Add the avocado and toss it gently.

SERVE
  1. Grilled Shrimp salad is ready, serve it immediately.

  1. My grilled shrimp salad is ready for a hearty dinner. It smells awesome and I’m sure the taste will be awesome too. This salad is ideal filler for a lunch roll-up or a plated salad. I love to have a scoop of salad simply paired with Crackers and I enjoy it.
