Ingredients
  • 2 pieces Basa fish fillets cut into big pieces
  • 18 to 20 Coriander sprigs
  • 3 tablespoon Butter
  • Crushed black peppercorns to taste
  • Salt to taste
  • 3 pieces Lemon
  • 1 teaspoon Red chili flakes
  • 1 tablespoon Olive / white oil
  • 8 to 10 pieces Lettuce leaf
Instructions
  1. To make coriander butter, first chop coriander finely and put into a bowl.

  2. Add crushed peppercorns and salt and mix well.

  3. Grate the rind of 1 lemon and add to the same bowl.

  4. Squeeze juice of the lemon and add to the mixture.

  5. Add butter and mix well.

  6. Now place 2 sheets of aluminum foil; one over the other on the tabletop.

  7. Place the prepared coriander mixture in the center of the foil and spread it evenly.

  8. Now roll it lightly to make a cylindrical shape and seal its edges.

  9. Refrigerate it till it set.

  10. Now place the fish fillets in a bowl.

  11. Add salt, crushed peppercorns, red chili flakes and olive / white oil or butter and brush well.

  12. Place the prepared fish on an induction grill and cook till the grill marks appear on both the sides.

  13. Make a bed of lettuce on a serving platter.

  14. Take out the coriander butter from the refrigerator.

  15. Cut the coriander butter into roundels and discard the foil paper.

  16. Place the glazing grilled fish on the bed of lettuce.

  17. SERVE

    Top with coriander butter roundels and serve immediately.
