Greek Yogurt Egg Salad Sandwich

Last weekend our family arranged a small get together at our farmhouse. But there was a rule for that get-together. Everyone has to prepare a food item and that has to be different from each other. It was a great fun! And being myself a competitor, I also prepared a dish and that is Greek yogurt Egg Salad Sandwich. You won’t believe, as soon as I opened my box, it disappeared. Ingredients
  • 1 Baguette cut into 4 equal pieces; toasted
  • 1 teaspoon Dried Dill
  • 1 tablespoon Mayonnaise
  • 2⁄3 cup Greek yogurt
  • 8 Large eggs
  • Salt for seasoning
  • Freshly ground black pepper for seasoning
  • 1 Avocado halved, peeled and thinly sliced
  • 2 Roma tomatoes thinly sliced for serving
  • 2 cups Arugulas for serving
  • Water as required
Instructions
  1. In a saucepan, add cold water and place the eggs in it and bring it to boil for about 2 minutes.

  2. Then cover the saucepan with a lid and remove it from heat and keep it aside for 10 minutes.

  3. Drain the water and let the eggs cool before peeling and dicing.

  4. Now in a bowl, mash the eggs, then add the Greek yogurt, dill, mayonnaise, and salt & pepper to taste.

SERVE
  1. Serve the sandwiches on a baguette with arugula, avocado, tomatoes and egg salad mixture.

  1. It’s a very light sandwich recipe which is very hearty which can be prepared just in 20 minutes. I love to add Greek yogurt in many dishes as I’m a bit obsessed with it, so I used it in this sandwich also which really turned out very well and the presence of herbs makes it fresher.
