Ingredients
  • ½ cup Whole coriander seeds
  • ¼ cup Whole cumin seeds
  • 9⁄10 piece Cinnamon sticks 3-inch size
  • 2 tablespoon Cloves
  • 10 pieces Bay leaves
  • 10⁄12 piece Big cardamoms
  • 2 tablespoon Small cardamoms
  • 1-inch piece Whole dry ginger or ginger powder (1 or 1 ½ tablespoon)
  • 1 piece Nutmeg
  • 1.5 tablespoon Whole black pepper
Instructions
  1. Pick the coriander and cumin seeds of stones.

  2. Cut the ginger into small pieces.

  3. Spread the whole spices on a plate.

  4. Keep in the scorching sun for 2 to 3 days.

  5. First grind the dry ginger first. (You can use ginger powder also)

  6. Then add the broken cinnamon sticks and nutmeg.

  7. Grind to a fine powder and keep aside.

  8. Now add the rest of the spices and grind to a powder.

  9. Now preserve it in an airtight jar to maintain the aroma.

  10. Mix both the spice powder well.
