- 14 oz (400 gram) Curly fettuccine pasta
- 5 Shallots green part trimmed thinly and sliced
- 14 oz (400 gram) Butter
- 8.5 oz (250 gram) Bacon Rashers thinly sliced
- 14 oz (400 gram) Mushroom thinly sliced
- 14 fl oz (425 ml) Cream
- 1⁄3 cup Shredded Romano
- 1⁄3 cup Shredded parmesan plus extra for serving
- 5 Shallots white part trimmed thinly and sliced
- Salt to taste
- Pepper to taste
Boil the pasta in a saucepan with salted boiling water, until al dente.
Then drain the pasta from the water.
Cook the bacon in a pan over medium heat, stirring often for 4 minutes or until golden.
Now heat the butter in the frying pan and add the mushroom and cook stirring it often for 5 minutes or until tender.
Then add the pale section of the shallots and start to combine.
Stir in the bacon and the cream.
Simmer it for 6 to 7 minutes or until the mixture is thickened slightly.
Now add the parmesan and romano and combine it well.
Then add the pasta and the green section of the shallots to the sauce.
Season with salt and pepper and toss until well combined.
Once done divide the pasta among the serving dishes and top it with parmesan before serving.
