This is one of the famous rolls which was originated from Kolkata, the former capital of India. Ingredients
  • 2 Eggs
  • 1 Cucumber julienned
  • 1 Small bell pepper julienned
  • ½ teaspoon Lemon juice
  • ½ teaspoon Chat masala powder
  • 2 tablespoon Tomato ketchup
  • 2 tablespoon Green chili sauce
  • 3 Green chilies chopped, seeds removed
  • ¼ teaspoon Black pepper powder
  • 9 oz (250 gram) All-purpose flour
  • 1 teaspoon Salt
  • 6 tablespoon White oil
  • 1 teaspoon Sugar
Instructions
  1. Take a bowl and add all purpose flour.

  2. Along with it add sugar and ½ teaspoon salt and mix it properly.

  3. Now add 1 tablespoon oil and start kneading the flour by add water and make a soft dough.

  4. Once it is done, cover the dough with a wet cloth and leave it for 30 minutes.

  5. Now cut the cucumber and onion into julienne pieces and mix with lemon juice and keep it aside for 5 minutes.

  6. Chop the green chilies and add in the cucumber – onion pieces.

  7. Then in a bowl, add one egg, sprinkle a little salt and beat it like omelet batter.

  8. Now take the dough and knead it again for a minute and divide it into 5 equal parts and make a round ball.

  9. Take one ball at a time and on a work surface, roll it out into a circle of 6-inch diameter.

  10. Now heat a frying pan over medium heat.

  11. Add 1 tablespoon oil in the pan.

  12. Now put the rolled out dough in the pan and fry it slightly.

  13. Pour the egg mixture over the rolled out dough by keeping the flame low.

  14. By using a spatula, press it lightly and cook for 1 minute in low flame.

  15. Then turn it to the other side and fry it for 2 minutes till it turns crispy and fully cooked.

  16. Once it is done, flip it off on a flat surface or on a chopping board.

  17. Then put some onion – cucumber – green chili mix horizontally on one side.

  18. Now add the julienned bell peppers.

  19. Sprinkle some black pepper powder and Chat Masala.

  20. Add the Tomato Ketchup and Green Chili Sauce over the topping.

  21. Lastly, squeeze some lemon juice.

  22. Now start rolling the egg roll from one side and wrap it in a paper towel.

  23. Then twist the paper towel to close it and finally close the bottom.

  24. Tuck it in at the bottom to seal it neatly.

SERVE
  1. The hot crispy egg is ready for a mouthwatering bite. If you want you can squeeze some extra lemon juice.
