Creamy Potato Soup

Sometimes you might get bored of having the same old non-veg dishes. At that moment, you must be thinking of something from the veg counter. Potato, which is a most common veggie found in almost all the kitchen can be a great alternative. In my home, my granny loves to have veg dishes and for her, I used to prepare verities of dishes including soup and this soup was also included in that list.

Ingredients
  • 7 fl oz (200 ml) Milk
  • 2 Carrots chopped
  • 2 Tomatoes
  • Handful of Coriander leaves optional; for garnishing
  • 2 Big onions chopped
  • 6 Potatoes
  • Handful of Celery
  • 4 teaspoon Vegetable oil
  • 3 tablespoon Butter
  • Salt for seasoning
  • Black pepper for seasoning
  • Water as required
Instructions
  1. In a pot, over medium-high heat, add adequate water and boil the potatoes.

  2. Once done, peel and mash the potatoes very well.

  3. Then over medium flame heat oil in a pan.

  4. Sauté the onions, tomatoes, and carrots for about 3 minutes.

  5. Then add the mashed potatoes and stir it very well.

  6. Pour the milk and enough water into it.

  7. Simmer the flame for about 5 minutes, until the vegetables are cooked and turned tender.

  8. Now add the salt and pepper.

  9. Finally, add the celery to it and mix it very well.

  10. When the soup reaches a creamy consistency, switch off the flame and add butter to it.

SERVE
  1. Garnish it with coriander leaves and serve hot.
