Ingredients
  • 2 tablespoon Butter
  • 3 cups Chicken broth
  • 1 Medium onion chopped
  • 3 Medium potatoes peeled and diced
  • 3 cups Frozen corn
  • 1 can Crab meat drained, flaked and cartilage removed
  • ½ teaspoon Salt
  • 1 cup Milk
  • ¼ teaspoon Black pepper
Instructions
  1. In a saucepan, sauté onion in butter until it is tender.

  2. Now add the Broth, corn, and potatoes and bring to boil.

  3. Reduce the heat; cover the lid and simmer it for 15 minutes.

  4. When the potatoes and corns are tender, remove from the heat and cool it slightly.

  5. Then in a blender, puree the ½ of the corn mixture.

  6. Pour the puree into the pan.

  7. Switch on the flame and add the crab, milk, salt, and pepper, stirring it well.

  8. Cook it over low heat until heated through.

  9. When it turns thickened, switch off the flame and the soup is ready.

SERVE
  1. Serve it hot by garnishing with sprinkles of chopped fresh parsley, if desired.
