For my 1st holiday trip to Italy with my BF, the furthermost thing that knocked my mind is none other than Pastaaa… This zesty dish is so delicious that always makes me groove. I and my boyfriend had this creamy cajun style pasta with full of lean chicken, peppers and onions served with sautéed green beans at a local restaurant. This increased the labor of love over the years to figure out how to prepare this pasta. So get ready to prepare this easy one-pot rich and creamy pasta for yourself and your loved ones.

- 8 oz (225 gram) Whole wheat fusilli or rotini
- 1 tablespoon Canola oil
- 2 slices Bacon chopped
- 1 lb (450 gram) Boneless skinless chicken breast trimmed and cut into 1” pieces
- 1 medium Green bell pepper sliced
- 3 cloves Garlic minced
- 4 teaspoon Cajun seasoning
- ½ teaspoon Freshly ground pepper
- 1 tablespoon All-purpose flour
- 1.25 fl oz (35 ml) Tomatoes crushed
- 1⁄3 cup Reduced-fat sour cream you can use parmesan cheese also
- ½ cup Sliced scallions for garnishing
Bring a large pot of water to a boil.
Cook pasta until just tender for 8 to 10 minutes or according to package instruction.
After it gets boiled, drain the water.
Now heat oil in a Dutch oven over medium heat.
Put bacon and onion and stir it occasionally until beginning to brown, for about 2 minutes.
Now add chicken, bell pepper, garlic, Cajun Seasoning and pepper and stir it until the onion and bell pepper are beginning to soften, for about 4 minutes.
Then add flour and stir to coat.
Now add tomato juice and bring to a simmer.
Cook and stir it often until the sauce is bubbling and thickened and the chicken is cooked through, for about 2 minutes.
Now remove from the heat and add cream to it.
Then add the pasta to the sauce and mix it properly.
The pasta is ready, serve by sprinkling scallions.
It’s a quick and easy one pot meal for weeknights which is prepared with great herbs. Everyone will love the taste of it even those who are not a fan of pasta. For me, I live for pasta, in other words, I could never give up my carbs.
