Ingredients
  • 1⁄8 cup Dried mango chopped
  • ¼ cup Dried cranberries
  • 1⁄8 cup Dried cherries chopped
  • ¼ cup Dried currants
  • 2 tablespoon Candied Citron chopped
  • ½ cup Butter
  • 1 Egg
  • ¼ cup Dark Rum
  • ¼ cup Brown sugar
  • ½ cup All-purpose flour
  • 1⁄8 teaspoon Baking soda
  • ¼ teaspoon Ground cinnamon
  • ¼ teaspoon Salt
  • ¼ cup Unsulfured molasses
  • 2 tablespoon Milk
  • ¼ cup Pecans chopped
  • ¼ cup Dark Rum
Instructions
  1. Soak cherries, mango, cranberry, currants, and citron in ¼ cup rum for at least 24 hours.

  2. NOTE

    Cover tightly and store at room temperature.

  3. Preheat oven to 325⁰ F or 165⁰ C and butter a 6 X 3 inch round pan or loaf pan and line it with parchment paper.

  4. Now in a large bowl, mix the butter and brown sugar until fluffy.

  5. Now beat in egg, flour, baking soda, salt and cinnamon and whisk together.

  6. Mix into butter and sugar in three batches alternating with molasses and milk.

  7. Now put the soaked fruit and chopped nuts into it and scrape the batter into prepared pan.

  8. Then bake in preheated oven for 40 to 45 minutes.

  9. After taking it out, cool in the pan for 10 minutes.

  10. Then sprinkle 2 tablespoon rum.

  11. Now cut out 1 piece parchment paper and 1 cheesecloth and wrap around the cake.

  12. Make the cheesecloth moisten with 1 tablespoon rum.

  13. Then arrange the cheesecloth on top of parchment paper and unmould cake onto it.

  14. Sprinkle top and sides of the cake with remaining rum.

SERVE
  1. The cake is ready to cut out a slice.
