This cake is one of my mom’s specialty. She often bakes for family parties and it always brings back fond memories. Since I’m away from home, I miss my mom’s handmade dishes. To switch on my mood, I often cook my mom’s dishes and so, today I’m baking my mom’s special chocolate cake.

Ingredients
  • 1 teaspoon Baking powder
  • ¾ cup Baking cocoa
  • 2 cups Sugar
  • 2 teaspoon Baking soda
  • 1 teaspoon Salt
  • 2 cups All-purpose flour
  • 1 cup Brewed coffee
  • 1 cup Canola oil
  • 1 teaspoon Vanilla extract
  • 2 Large eggs
  • 1 cup Milk
FOR ICING
  • 5 tablespoon All-purpose flour
  • 1 cup Milk
  • ½ cup Shortening
  • 1 cup Sugar
  • 1 teaspoon Vanilla extract
  • ½ cup Butter melted
Instructions
  1. 1 Preheat the oven to 325⁰ F or 160⁰ C.

  2. 2 Now take a bowl and sift together all purpose flour, salt, baking powder, baking soda and baking cocoa.
  3. Then add oil, coffee, and milk and mix at medium speed for 1 minute.
  4. Add eggs and vanilla extra to it and whisk it for 2 minutes longer.
  5. NOTE

    The batter should be thin.

  6. 6 Now pour this batter into 2 greased and floured 9 inches round baking pan or muffin cups.
  7. 7 Then bake in the preheated oven for 25 to 30 minutes.
  8. Once done, cool on wire rack for 10 minutes before removing from pan.
MEANWHILE LET’S PREPARE THE ICING
  1. In a saucepan, combine the milk and flour and cook until thick with medium heat.

  2. When it is thickened, cover with a lid and refrigerate.
  3. Now take a bowl and beat the butter, shortening, sugar, and vanilla until its creamy.

  4. Then add the chilled mixture and beat it for 10 minutes.
NOW LET’S COMPLETE THE CAKE
  1. Pour this mixture over the baked cake and spread it evenly with a spoon.

  2. Then frost cool the cake in the refrigerator.
SERVE
  1. Once chilled, cut the cake into wedges and serve on a white plate with a fork.
